Fried Omelette with Prawns

Ingredients
  1. 4-6 medium prawns (peel off shell)
  2. 2 eggs (beaten)
  3. Finely shredded garlic
  4. Salt (to taste)
  5. Black pepper (optional)
  6. Olive oil or other oil

Cooking Method

  1. Preheat the wok. Pour and spread the oil around wok.
  2. Put in the shredded garlic and fry till it is golden brown.
  3. Pour in the prawns and fry till they are almost cooked.
  4. Pour in the egg paste and add salt to taste. Spread the prawns over the egg and let them stay in position.
  5. Flip over the egg and fry on the other side till it is golden brown.
  6. Garnish the omelette with black pepper. It is now ready to serve.

Comments: This is the easier dish ever and it is very hard to go wrong. Make sure the prawns are fresh or else it is very easily detectable. Serve together with stir fried vegetables and a bowl of rice and a healthy set of meal is complete!

Prawn Soup for Noodles


Prawn Soup for Noodles

Ingredients

1. 4-6 medium size to large prawns (separate the prawn heads and bodies with skins on)
2. 1 packet of noodles of your choice (For here, I use mee suan)
3. Seasonal vegetables
4. Finely shredded ginger (fried crisp)
5. Finely shredded garlic (fried crisp)
6. Finely shredded spring onions

Cooking Method

1. Fry the shredded ginger and garlic separately in the oil till golden brown.
2. Pour in and fry the prawn head till golden brown, crushing the prawn head as you fry.
3. Add water and salt to taste and put in the prawns (with skins) to boil. When prawns are cooked, take them out and shell them.
4. Add vegetables to the soup.
5. Put the noodles (mee suan) into the soup and cook till it is soft and tender.
6. Place the noodles in a bowl; ladle over the soup and vegetables.
7. Garnish with prawns, crispy fried onions and shredded spring onions.
8. Add a few drops of light soya sauce to taste.

Tips

1. It is crucial that the prawn heads are fried till they are aromatic and golden brown. Otherwise you will not get the rich reddish looking soup. The distinctive flavour of this recipe is dependant on the prawn heads being fried just right.
2. The crisply fried onions and spring onions as garnish also give additional flavour to the soup.

Comments: It is fast and easy cooking for one or small group of people. Instead of eating instant noodles most of the time, why not try something healthier like this ya? :)
