Jia Le (H.K.) Roasted Cuisine

Last visited: 14 April 2007

I love to eat char siew (roasted pork meat) ever since young. Still remember those times when I would follow my grandma to the wet market, there was this stall that sold roasted food. The uncle was very friendly and generous, and since my grandma was his usual customer, he would always chopped a big piece of char siew just for me. It was my happy moments as a kindergarden kid, holding the big piece of char siew in my little hands and strolled triumphantly down the street. Guess this is how I started to love roasted food and hence I can pretty well tell you what to consider as a good roasted food.

For char siew, the best is to cook it in the most traditional method -- charcoal grill. The pork meat selected should contain at least 50% of fats. This is important in enhancing the taste of the char siew. If lean meat is used instead, the taste would become a little dry. This is the same rule as to roasted duck, pig, meat and goose. For these 4 roasted food, the presence of the fats would make the skin much more crispy. Hence, roasted food certainly doesn't sound very healthy. You just have to remember to remove the fats before you eat them.

Comments: This stall sells true Cantonese style of roasted food, and even the more rare items like roasted pig, goose and squail which you normally only get them in the more classy Chinese restaurants. It is rare to find such good quality of roasted food among the foodcourts and hawker stalls level. This stall certainly has a standard of those of the restaurants and even hotels, yet selling at much lower prices compared to them. I strongly recommend you all to try its roasted duck and char siew.
